TechnologyFreeze drying one of the best methods of food preservation was invented a few centuries ago by the South America Indians inhabiting the Ands. They observed a natural phenomenon of evaporating crystals in the conditions of diminished pressure from foodstuffs previously frozen. This discovery contributed to invention of a new perfect method of food preservation called liophilization or freeze drying. Today, almost all organic substances, including vegetables, fruit, mushrooms, herbs and meat are preserved by this method. The products preserved by this method keep natural taste, aroma, appearance and, what is most important, full nutrition value. Besides they don't contain preservatives, and their well maintained shape and cell structure enable quick rehydration of the product. Thanks to these qualities, liophilized products are widely used as natural flavouring additives in many foodstuffs.
